| Jaillance, Cremant de Bourgogne, Brut $15 |
| From the Mâconnais, the most southerly part of the Burgundy, the Jaillance Brut is 80% Chardonnay, with the other 20% being made up of Pinot Noir and Gamay. The Chardonnay gives this sparkler its finesse, the Pinot Noir brings structure, and the Gamay adds characteristic freshness. The wine is made using the same traditional method same as Champagne. This brute has toasty aroma with hints of citrus and pear. It has a rich, smooth buttery mouth feel with honey overtones. |

| The Sichel comes from the Southwest of France where the hills start to rise to the Pyrenees. Borrowing from its neighbors, the wine is a blend of Cabernet, Merlot and Syrah added to the local grape Tannat. It has soft tannins and a medium body of dark fruit flavors like plum and black current. |

| The H&B Minervois is a blend of mostly Syrah with some Grenache and Carignan added. The wine is aged in a combination of stainless steel tanks and various sized barrels. The different aging brings out different qualities in the wine. The barrels adding structure and tannins and the stainless keeping the fresh fruit flavors. The wine Advocate describes the wine as mingling : dried and distilled fruits (cassis, cherry, cranberry) with garrigues and ocean spray minerality. Brimming with sappy fruit, resinous herbs, and a meaty pan dripping-like essence, this wine displays a lovely counterpoint of creamy texture with bright, subtly tart fruit and a satisfyingly-long finish. Sometimes we think they get paid by the word, but the wine tastes good. Come and try it. |
